
We only had the rental car for a few more days and we wanted to do a couple of local touristy things before that happened. Tom and Tammy of the Outremer “Mac the Cat” had been to a few other cooking classes with Carolyn, and gave us the heads up on the pasta making class. It was a 9 to noon (ish) class and 7 of us (including Doug and Sandy who are always up for adventure), showed up to learn some basic recipes and techniques..and eat the results!
First up were 2 types of hand rolled noodles in a Sicilian pesto sauce, then a delicious potato and mint stuffed “dumpling” in a tomato basil sauce , and the last one was a spinach and ricotta Agnolotti (similar to a small ravioli), in brown butter and sage. Yum!
